I've got a 1955 Wingmaster that needs a new forend tube/action bar assembly.  Will any 870 assembly work or were the older ones different in some way ?

You need one from a pre ‘85 870. I would highly advise a full flex tab conversion (forend, slide, bolt, shell lifter) if the gun is in decent shape.

The no longer make the one you need.   However you can get a modern one and cut off the extra tab of simply get a new slide block with it.  Here is the new one https://tacticalgunslings.com/remington-870-forend-tube-assembly-with-nut-all-gauges/    And here is the slide block  https://tacticalgunslings.com/remington-12ga-870-slide-assembly/

There is nothing wrong with using you slide block and cutting the extra tab off the Forend tube Assembly.   That tab was added to the modern guns to better stabilize the breech bolt.  870's worked fine for many years without it.

Steve, I should have mentioned if you can find a used on make sure you can see it.   I would not buy an old one sight unseen because it is one of the most critical parts of the 870.  There are two timing cuts, one on each action bar.  These timing cuts operate the shell latches and if they are to worn or chipped they can cause the gun not to feed.   A new forend tube assembly brings new life to an old 870 and is the best thing one can do for an older gun to ensure feed and function.  

Find a new 870 and look at those timing cuts and you will know about what to look at if you find a used one.
